Banana Soft-serve

If you love bananas, you'll like this recipe. If you love icecream, you'll LOVE this recipe. My Crossfit coaches have limited me to one banana a day... so it's hard for me to fit this in since I really really really like to eat a banana and peanut butter either for breakfast or before my workout. BUT every now and then we do this as a treat. Josh liked it, and we didn't give it to Carter for fear of his potassium creeping above his new normal which is on the low end of normal's normal. Does that make sense? Maybe not. But we try to keep him away from banana either way. Anywayssss... this recipe right here:

Ingredients
Banana
Delicious, fun, paleo-rific toppings such as dark chocolate chips, shredded coconut, honey, nuts, nut butter

Directions
1. Cut up a banana. Put it in a ziploc bag or a tupperware. Put it in the freezer. Let it get good and frozen.
2. You can probably do this in a blender, too... I'm not sure. I put my banana(s) in the food processor and let it whirl until it's nice and smooth. You can even add a little almond or coconut milk if it's not a consistency you love with just the straight up banana.
3. Add your toppings and consume!!!


This is really a super treat to make if you just really need an icecream fix but don't want to fall off the wagon and end up at DQ like we do sometimes..... or eating/drinking something like this.....

Things My Daddy Taught Me

My dad has taught me so much in my 22 years of life.

1. He taught me how to be a Gator fan. He has taken me to games. BIG games. My Christmas present one year was going to the SEC Championship game. I know the words to "We are the boys..." I chant with the band. I walk miles to the stadium without complaining (I even did it once while I was very pregnant!). All because "It's great to be a Florida Gator!" I'm glad we can share these fun experiences together.

2. He taught me how to golf. I hated it when I was little, so he never pushed it on me. Now I love it. I still suck horribly at it, but he works with me :) We play in our Booster Club tournaments together and played intramurals some this year... we were even co-coaches!

3. He taught me that education is important. He always expected the best out of me in my schoolwork. In grade school a B was just not good enough. I would get in trouble for low As! However harsh it may have seemed, it landed me a full-ride scholarship to AUM, and not much of a struggle to make it through 4 years to a degree. He finished his bachelor's at Faulkner the year I graduated high school, and his master's last year at AUM. We walked together - I for my bachelor's, he for his master's!

4. He taught me about patriotism. My dad served in the United States Air Force for 20 years. He is one of the most patriotic people I know. He loves this country more than most. I inherited this gene, and neither one of us can hear the National Anthem without tearing up... and if there's a fly-over... it's OVER. At an air show after an F-16 fly-over, he looked down at me and said "That's the sound of freedom."

5. Along the same lines of number 4, my dad taught me how to work hard. I've had a job since I was 14 or 15. My dad has always enjoyed working, and does everything to the best of his ability. He pushed me to apply for a civilian student position, and it was the best push he's ever given me. My job at DISA has been a wonderful experience, and gives me the means to support my family. I love working with my dad, and he's daily giving me encouragement and advice. My favorite, most recent quote from him is, "Put a boot on, Piatt!" Some days when things just aren't going great, he drops his favorite line and it turns my attitude around, "Go do something for your country." It reminds me that ultimately my job is to support the warfighter, and if I'm not doing my best, it directly affects them. I'm proud to be known as "Country's daughter" around the building :)

6. My dad taught me about marriage. He's always giving me marriage advice... especially on the subject of finances. Most of the time it's good advice. He's been married for 22+ years, so I guess he knows something about it!

7. He taught me to volunteer. I get my social butterfly skills from my father, most definitely. I've served as Booster Club secretary, and currently am President. I've volunteered as intramural golf coach. I've worked the United Way CFC every year since starting DISA. I joined a sorority (back story: dad begged me to join one when I started college... I thought they were stupid... but changed my mind my junior year of college... and voila! I became a DZ. I made him hold up his end of the bargain "I'll pay your dues if you'll join one"). I lovelovelove volunteering. One year dad took me to the soup kitchen in Montgomery and we helped serve lunch... I will never forget that experience. I'm a huge proponent of charities, especially since our experiences with Carter. Places like the Ronald McDonald House need programs like the United Way, and supporters like YOU to fund their operations.  "He who has pity on the poor lends to the Lord, and He will pay back what He has given." (Proverbs 19:17)

8. He taught me to be TOUGH. A girl's gotta be tough to get along in today's society. However, he's not too hard on me when I'm vulnerable and a cry-baby. Like when I have a flat tire. And then he takes care of me and calls up some of his friends to come help me :)

9. He taught me to have fun. My dad's a fun guy. It's always a good time with him around.

10. He taught me about love. They say there's nothing like a father's love... I think the same goes for a grandfather's. Carter loves his Papa, and I'm so glad that my dad is involved with him. I love when Carter's face lights up when he sees dad, and how tickled he gets when he plays with him. Dad has been there for us since day one that we found out I was pregnant - we knocked his socks off with the news as he walked in the door from a flight back from Vegas. He went with us for my 20 weeks ultrasound when we found out there were problems. I'm so thankful he came for the targeted ultrasound where they diagnosed the problem and gave us options - Dad asked the tough questions when me, my mom, and Josh were still trying to absorb the information the doctor was giving us.



Dad, thanks for being the best dad and Papa ever. I don't know what I'd do without you. I love you, and hope you have a happy father's day.

here we go again...

Sunday night... *sigh* ...the night before Monday. Monday's eve. Ohh the horror. Just kidding :) I can't wait to start another week. Last week finished up wonderfully. The bake auction went well, the golf tournament - even better. I had a blast playing with my dad, Chris, and Jeff. Saturday morning Carter and I did Walk of Life with Mrs Terri and Nichole. The rest of the day we hung out with Meemer.. did a little running around to Hobby Lobby and Walmart. Carter and I took a massive nap from 4-7pm. Then we ate dinner, did a bag change, and headed home for more sleep. This morning Josh got home and cut the grass, then we went to Montgomery to Salsaritas, the Vitamin Shoppe, and Academy. Got myself some motivational items: a new hat to run in, new socks since mine were causing blisters, weighted gloves for my kickboxing class, a new sports bra, and some body glide. This afternoon when we got to mom's I did a 2 mile loop around Richfield - it was beautiful and breezy. My goal for this week is to log at least 10 miles. Josh registered for his first Crossfit event - #4#, and I registered for the Color Run 5K in Birmingham. He sure hates me spending money, but is trying hard not to discourage me from my fitness efforts ;) This week will be much more low-key, thank goodness. I think the most exciting thing is teacher appreciation week! This is why I'm up so late... I've been baking cupcakes.

Kickin' it into High Gear

THIS GIRL IS SO BUSY!!! Run down of the week so far...

Monday. Work. Running around for Booster Club ALL afternoon. Work. Headed home around 3:30. Got in a short mile. Shower. Cooked fish tacos for dinner. Helped get Carter squared away for bed. Then we made a run to Academy for golf tees, Tropical Smoothie Cafe for a snack, and Walgreen's for Josh some sinus medicine. Then we actually went home and got Carter IN bed. And we all slept.

Tuesday. Weighed in for Biggest Loser - down half a pound - YES! Teambuilding class for work. Lunch with Shannon was AWESOME. Apparently I'm on a smoothie kick. We had Tropical Smoothie Cafe. Back to class. Then headed to Prattville to pick up sponsorship signs for the golf tournament. Picked up the kid brother from after school care since dad had a work dinner, and mom's still in Europe. Josh cooked poppyseed chicken for supper while I put together 60 goody bags for the golf tournament. Then we made cookies for dessert. Eventually dad came and got Grey, and then we went to bed.

Wednesday. Dropped C off at daycare. Straight to teambuilding. Went to work and checked email and forgot that I needed to eat. Ended up with string cheese, applesauce, and almonds - I was starving by 1. Finished teambuilding class around 3:30. Picked up C and swung by the parent's house to clean out the litter box since the men can't handle it without gagging. As soon as we got home at 5, I started baking. One ooey gooey butter cake, and 32 simply delcious strawberry cupcakes with strawberry cream cheese icing. I somehow managed to bake these, and ice the cupcakes, change C's bag, feed him, and whip up a strawberry banana smoothie with my left over puree by 8o'clock. He finished eating and went to bed around 8:15, and I cleaned the kitchen up, made formula, and got a shower.






Which brings us to now.....

I. are. tired. alot.

Tomorrow is back to "regular" work, and the bake auction (which is what all my baked goodies are for). I also have to make sure everything is squared away for the golf tournament Friday... it's gonna be amazing! AND I get to drive to Atlanta tomorrow afternoon to get mom from the airport! I'm so excited to hear all about her trip. I hope she sleeps on the plane, because I'm making her talk the whole way home! Friday I'll get to relax some after registration for the golf tournament. Hopefully my golf game will be decent and the weather will cooperate. Then Saturday is Walk of Life!
